Homogenizers and batch mixers used for producing fine droplets and particle size in products such as creams and sauces. For flavour emulsion or solids dispersion, a high shear mixer is applied in product normally involving colouring, condensed milk and gelatins. Bottom entry mixer used with a lower speed scrapper or stirrer can produce a high shear homogenization of liquid and powder mixture.
